Bookmatching involves making the whole piece of work appear to be one.
Yes I'd imagine most would use an off cut to go round the corner, but if the offcut fell in to the middle of a reveal giving you a double cut inside the reveal, chances are you wouldn't use it would you.
You'd fit a larger piece so that it reaches the window.
With this, you wouldn't get the choice unless you manipulated the pattern.
If you look at this image,

The pattern has a dark triangle to the left of the tray, it then goes up and left toward the bath, this is the correct run of pattern.
However, if you look at the image with the vanity unit,

you have the same dark triangle on the floor.
This time, instead of running the correct piece up the wall, I've actually mirrored the floor instead.
Not only that, looking at the piece on the floor there is a band of white running full length nearest the centre of the floor, towards the spider web looking bit.
Now look back at the wall piece, the band of White above the thin black line is much smaller, and the peak of the dark bit almost reaches the joint. On the floor it doesn't.
The reason for this is that to mirror the floor, I have to use exactly the same size cut floor and wall, to provide the mirror effect, however, that would of taken me past the correct height of the first wall joint.
Now because there was a band of white full length, it enabled me to cut the tile down to the correct height. Effectively cutting both sides of the tile and use the bit in the middle. Now I have a white band full width of the room.
Why did I want this?
Well now I can start using a different part of the pattern instead of using what I should, and the reason for that was. Cos those tiles were needed in another room, so I had to find an alternative. And that's how I achieved it.
Nope I know you didn't ask that question Craig haha but that's bookmatching, making it flow and seem like it's one piece.
So that's the difference.
