Yes , face side down and score the clay and snap. Jersey Nieve / Nacar / Mix ( used yesterday) break ok this way on the short run. If your worried about finish use this method only for internal cuts that will be covered by the opposite cut. Cut the opposite cut on the face if you want to , but i find the Jerseys cut well for this method anyways and the site work I do is all siliconed ( which I'm not using as an excuse for poor cutting by the way. )
For the long run of the tile I scribe the glaze and go to the nearest middle part of one of the coloured lines . If you try to get too close to the edge the raised edge squiffs the scribe.
As for grouting , patience is key , work one wall at a time and only grout to the joints rather than spreading all over. For a cubicle I'll grout verticals halfway down , then horizontals , then repeat for bottom half. For whole wall I'll quarter it , left to right for me ( ie: 4 sections ) once wall is grouted proceed to wash off.
Spongeboard side to side motion a row at a time for intial wash , then a first rinse , and then for this tile I do a 2nd rinse to make sure.
Sounds laborious but having a system with such tiles pays off in the end.
Lastly , next time , pray for Jersey NACAR , it's gloss glazed. :0)
Diggy
Edit: PS : If you're asked to do a whole bathroom in Zeus or Laja , tell them you're ill. :0)
