best way to fill chases and holes for tiling

hi there.
what is the best way to fill chases and holes etc in walls so that you can tile over them as soon as posible.

if the wall was being painted , papered etc i would use bonding and filler but im afraid that that would soak up water or not stick properly.

what way would be the best

I still reckon mortar dries faster.
