Should i only back butter porcelain tiles, and can someone tell me why do this and not every tile?

my concern there is the potential for trapping air pockets Andrew and therefore not getting a solid bed.I tired a slightly different method today to my normal back buttering, after watching another tiler use it and discussing it with him. Notched floor and back of tiles (600 ceasar stone)8mm on floor 4mm on tile and cross bonded, the sub floor was slightly out and this method made light of it.
I back skim all tiles, apart from sheet mosaics, I back butter if there's indiscrepancies in the substrate and areas need padding out a little.
