If you use a 10mm notch trowel the adhesive will press down to about 3 or 4mm as it fills the dimples in the matting. Not sure if the minimum depth is less but the tech department of the selected adhesive manufacturers will be able to confirm

:) the hydration if cement is strongly exothermic. I would guess the adhesive is made with pretty much brand new cement and hasnt been sat in the bag for long. This would lead ut yo being hotter than usual as it sets. There is no reaction between bitumen and cement that I know of.
spreader plates are generally pretty inefficient as they have little mass. They tend to need higher temperature input making them not very energy efficient either. A screed or dense conductive board will always be better.
ditra would cope. I would not necessarily trust the hygrometer reading this time of year simply because the temperatures overnight tend to lead to interstitial condensation issues which throws the readings off.
