From a pro point of view Id rip off and rebuild the steps to suit the tile size.
If your going to repair the steps before re-tiling you may as well put a little extra in for aesthetics.

I think I'd just do the fronts and render the sides flush!

Her in doors would not like that!
Any tips on setting out the sides having laid the risers first as you suggested?
