Rapid set or one coat plaster..

Got to do some prep work in a bathroom on thursday, not done this before.

i can plaster so was thinking of skimming with some one coat plaster or most on here use Rapid set,

the wall i am preping is over old tile adhesive and some exposed bonding,

which product would be the best and set the fastest,
