Questions on chiseled trav

I am beginning to set some travertine in a spa room and have a few questions.

We had some 38mm coping bullnosed on opposite ends since the side of the concrete spa is raised out of the slab. One side is perfectly clean and the other is chaulky white like they didn't finish it properly. Would a flexible 400 grit wheel on a hand grinder be the best to clean this up?

The floor will be a light colored French pattern travertine, chiseled is what they call it. The thickness is 1/2" or 13mm with the chiseling about half that deep. The other half is squared nicely. Is it ok to bump these tiles tight and forget the grout like I've seen done with outdoor pool pavers? Or is that a bad idea?
They want to keep the flat dry look with no sealing, to have traction when wet so skipping the grout would save some time.
