Nearly there ... sorry for all of the banal questions. .... two more though!
1) I’m using a 250x400x7mm glossy tile. Do I use a 2mm or 3mm spacer? It’s a small en-suite room.
2) will this adhesive be ok? (see pic). The instructions say it’s good for 300x600 but I know that larger tiles may require a mix-yourself adhesive. If not, is there one I can get from a major diy shop which will be ok?

2mm spacers generally for walls, as for that adhesive i can't comment as i haven't used it. i believe screwfix & Tool station also stock Mapei bagged adhesive, unsure what types but a slow set if that will be better than the tubbed stuff.
