i'm doing my first sink splashback in a kitchen, is it correct that i need to use a full tile row at the sink/worktop level to begin? thanks

As long as the sink/worktop is bang level and you are not left with silly cuts anywhere, yes.

Yep full tile if possible from the worktop if it's level and not leave a slither of a cut under the wall units or window.

Main thing is to always mark out everywhere that your going to tile, so you know where and what cuts your going to have everywhere.
