Hi whitebeam - thanks for the follow up. Definitely not sand and cement. Looks like 12mm browning coat (pink) with maybe some fibres added (?) and then 2-3mm final skim.

Tiles chosen are 600*300 porcelain which I'm told are 23 kilos per square metre + adhesive.
