I don't want to jump to any conclusions about what a good or bad job is. So I would greatly appreciate any input.

Having a full bathroom renovation done - Tiles were put on yesterday, some grouting has taken place today. I couldnt help but think some things looked off such as white spots on grouting, possibly badly cut tiles around the windowframe and door frame? uneven wall? (I thought the plasterboard under the tiles was to even things out - I could be wrong)
Uneven colour on grout.

On his webpage it says he will never ask for money until the work is complete and you are satisfied yet he is asking for half already, so that pushed me to ask the forum what they think.

I could be a complete dope and this is fine, let me know!

Not very professional but I have seen worse its a bit late to find fault now I would list down all the faults you are not happy with then talk to your contractor and come to a agreement on the best way forward, or kick his arse off and get a proper tiling professional in :p:p sorry that wasn't helpful . You could contact a Mark Heinlein in the first instance and discuss your options.
I don’t have a personal number that I can find, but he’s the director of technical training at the NTCA
(National Tile Contractors Association) in the USA or your local representative, you will have one.
They will be able to best advise you on your next course of action and what your entitlements are.

The standard of workmanship could be improved on.

... and I wouldn’t pay anything ( unless it’s materials) till you were happy!

Looking again at this post I feel as though I’ve been a bit critical!
Looking at one of those photos it clearly shows some variation in tile size

and the corners will have a bead of silicone for expansion. As @antonio show us some photos from a distance.

The grout looks like it has efflorescence .. this is usually becAuse of overwashing or not allowing it to dry before being exposed to water
