Newbie to tile

Had a leaking shower in out flat we brough 10 months ago. Drainage trap was not sealed correctly. Anyway we have now decided to pull it all out and fully replace with new shower tray / enclosure and tiles.
Tiles covered two walls, shower is in the corner of those two walls.

Flat is of solid brick walls and floor.

Old shower out, old tiles off - plus about 30% of the rendering. Got a builder coming to repair the wall back up and will be ready for tile again.

First question. Tanking - Is Mapei Aquadefense ok to use straigh onto new plaster and then tile on?
Also would this be suitable for the floor under the shower tray?
